Wild Card Wine #1 - 1 in 25 chance
First Drop Dragons Blood Cabernet Sauvignon 2014
McLaren Vale, SA
Single Vineyard | Cult Producer
Seven years old but right on time (and bloody good at that). This is the flagship dreams are made of. Intensely rich and structured, this wine from First Drop would have been too tightly wound a few years ago. Now it’s sitting pretty and opening up, begging for you to have a taste. The nose is of cassis and plum standing on the shoulders of potpourri and tobacco leaf. The immensely viscous palate yields dark berry flavours, cedar notes from 24 months in new French oak and a lingering finish that brings the whole experience home. A fully enveloping wine for those that want to be immersed.
YOU’D PAY $250 full price.
Wild Card Wine #2 - 1 in 10 chance
Schubert Estate Lone Goose Shiraz 2016
Barossa Valley, SA
96pts James Halliday| 96pts Sam Kim | 96pts Wine Pilot | 5 Stars Sam Kim
Schubert Estate has a winner here in a single block high-end Barossa shiraz with the brightness dialed up a notch thanks to a touch of viognier. It’s the northern Rhône recipe for greatness, realised much closer to home in Australia’s top shiraz region. Every aspect of the crafting is hands-on, from the harvest to the wild yeast fermentation, on through the basket pressing. Only then can this delicious drop get a rest, seeing 20 months in older French oak. The nose is a touch floral (thanks to the viognier), but that deep shiraz fruit powers through, accompanied by herbal and leather notes, along with chocolate and licorice. What happens when the darkness of Barossa shiraz sees the light? You’ll have to pull the cork to find out.

Wild Card Wine #3 - 1 in 5 chance
Ulithorne Paternus Cabernet Shiraz 2019
South Australia
96pts Sam Kim | 5 Stars Sam Kim | 5 Red Star Halliday Rated Producer
Australians have perfected the cab shiraz blend. We’ve also perfected innovation and a can-do spirit. So it’s all fitting that Ulithorne has grabbed the best cabernet fruit from the best SA cabernet region (Coonawarra) to blend with the best old vine shiraz from their estate vineyard in McLaren Vale. The resulting wine is ripe, dark and peppery. Layered on top of beautifully integrated oak (16 months in a mix of French and American), you’ll find blackcurrant, raspberry, plum, pepper and cinnamon. The tannins are silky and the finish lengthy, making for a spectacular example of the original Aussie red blend.

Kickass Kili have done it again. Their inimitable Golden Hillside shiraz is a firm ‘fo fave, and consistently one of the fastest selling wines we bring in. Not surprising, really. Ripe, red berries and cherries, sizzling spice, crunchy herbs and a dash of that something magic that makes pinot the captivating mystery it is. A light lick of French oak gives it the springboard it needs to jump to life on the palate. Cracking stuff!

Howard Park Wines Cabernet Merlot 2018
Margaret River, WA
5 Red Star Halliday Rated Winery | First Families of Wine | Women In Wine
Margaret River icon Howard Park is a master of cabernet and all its blends, so our joy was quite warranted when we landed this wine. There’s a fair bit going on here, with notes of blackberry, raspberry, mocha, mint, rosemary. And while that description was a bit of a mouthful, this wine isn’t too much of one, sitting on the brighter side of rich rather than the heavier one.

This is a great example of how grenache sings in rosé, on the table with food or simply in the glass. Beautifully crisp and refreshing, it’s like a dive into a cool pool on a hot day. Le Bon Chardonnay 2018
Yarra Valley, VIC
It’s no secret that winemakers love to see their creations on restaurant lists. Some make wines specifically for it, as is the case here with this Le Bon chardy. Unfortunately there are’t a lot of open restaurants in our current climate, so the wines need a home. How about yours, mofo? This is Yarra Valley chardy made by Mandala that was originally destined for dining out. It’s crisp, fruit-driven (peaches, nectarines, lemons), and has a nice touch of honey on the palate. So order in from your favourite takeaway joint and crack a bottle of this. It’s the next best thing to sitting in a booth at your local.

Hollick The Bard Shiraz 2017
Limestone Coast, SA
Double Gold CWSC 2020
This wine from Hollick reminds me of those once-a-year, deliciously expensive artisan chocolates: a dark raspberry ganache lures you in, with a crisp-cracking exterior and a velvet-smooth core. Add in some earthiness and black fruits, plus a few seeds of vanilla bean and we’re getting pretty close. It’s a medium-bodied wine, so won’t weigh you down, effortlessly matching savoury to silky.
