Hurrah, the 2021 Gapsted rosé is here, lovingly made from a Mofo fave producer. Grown on vines that feature the ‘ballerina canopy’, this King Valley pinot noir rosé is grown on some vertically trained shoots that look like a ballerina dress, which hangs down on either side of the trellis. It makes for a pretty, but labour intensive growing system, that allows more airflow and control of grapevine vigour. Gapsted follow this kind of meticulous hands-on vineyard work with the same attention to detail in the winery. The grapes see small batch fermentation and oak maturation, and the result is the purest expression of these dance-worthy grapes you could hope for.
Fragrant wild strawberries and redcurrants meet rich earthiness and a zesty, fresh herbaceousness. Don’t overchill - it’s perfect if you have it out of the fridge for 10 or 20 minutes to let the flavours thrive in the glass. You’re gonna want some antipasto and either a bunch of sun, or a crackling fire.
